Observation (CORRECTED DURING INSPECTION): Food items in the walk-in cooler were measured to be between 9-10C (e.g. various cheese).
Corrective Action(s): Please transfer potentially hazardous food to a working cooler at 4C or colder until walk-in cooler is working (4C or colder).

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Dishwasher detected 0ppm chlorine at plate level even after changing to a new container of sanitizer and priming the machine. 2) Quats sanitizer mixed in bucket or spray bottle were reading 50-100ppm. 3) Meat slicer appears to have food debris on the unit. Operator informed that it was last used this morning and should have been cleaned already.
Corrective Action(s): CLOSURE ORDER issued. See comments on code 308 re: dishwasher. Remix the Quats sanitizer so there is 200-400ppm available to use. Obtain new test strips as the current batch fell into dishwasher and does not work. Extra strips provided to operator in the interim. Take apart the meat slicer, clean and sanitize the entire unit properly.

Observation: Dead mouse noted by the back door where stacks of pop was stored. Mice droppings noted under dishpit/by dough mixer and in the bar area underneath sink.
Corrective Action(s): Please remove mouse and droppings. Clean and sanitize all surfaces by follow up inspection. Provide pest control reports for review (should have service this week).

Observation (CORRECTED DURING INSPECTION): Back door by racks of pop was open at time of inspection.
Corrective Action(s): Please keep back door closed to prevent pest entry. Install screen door if you'd like to keep it open during business hours.

Observation: Food debris noted on the kitchen floor, back area, walk-in cooler and under dishpit. Shelving racks in the walk-in cooler is also observed to have food spills (e.g. tomato sauce).
Corrective Action(s): Please complete a DEEP CLEAN by follow up inspection.

Observation: 1) Dishwasher is reading 0ppm chlorine at plate level even after changing to a full container of sanitizer and priming the machine. 2) Walk-in cooler is reading 10C, ice build up noted around condenser.
Corrective Action(s): CLOSURE ORDER issued. Repair/replace the dishwasher so it is able to dispense 50-100ppm chlorine at plate level, and walk-in cooler maintained at 4C or colder. Retain service report for review.
