Observation (CORRECTED DURING INSPECTION): In the customer self-service area - Mike carafe noted with an internal temperature of 6.9C and cream carafe noted with an internal temperature of 5.9C.
As per operator, carafes were brought out at 9 AM this morning. Current time of inspection was around 1:15 PM.
Corrective Action(s): **Issue corrected at the time of inspection**
Operator discarded the milk and cream during the inspection.
Over time, carafes lost the ability to hold temperature below 4C, therefore milk and cream kept in these units must be discarded and replaced every 4 hours.
Have a system in place where the milk and cream are discarded and changed out after every 4 hours.

Observation (CORRECTED DURING INSPECTION): No quat detected in the quat sanitizer spray bottle noted in the front of house during the inspection.
Corrective Action(s): **Issue corrected during the inspection**
Operator discarded the content of the spray bottle and re-mixed the solution. 150 ppm QUAT detected in the spray bottle (note: Facility is using Noriquat, 150 ppm is an adequate concentration for this sanitizer).
Obtain QUAT test strips to allow operator/ food handler to determine if the correct amount of QUAT has been dispensed for use before using.

Observation: Noted a display cooler at the front of house not plugged in during the inspection - unit empty.
Corrective Action(s): As per operator, they have plans to remove the non-functioning display cooler and to extend their serving counter.
Whenever the floor plan is to be changed, operator MUST submit an approval for revise floor plan prior to making any changes at their facility. Changes are only allow once approval has been granted by Fraser Health. Please submit change in floor plan to the district inspector before removing the display cooler.

Routine inspection conducted today:
Handwash stations, including staff washroom, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
General storage hierarchy in cooler units satisfactory. Food stored protected.
Soup noted > 60C in the hot hold unit.
200 ppm QUAT detected in the sanitizer container in the back of house.
High temperature dish machine was able to attain 71.3C at the plate level during the rinse cycle.
As per operator, all in-use tongs are washed throughout the day, sometimes as often as every 15 minutes.
Note: Remember to wash and sanitize all in-use utensils (including ice scoops) every 4 hours at a minimum, at the end of the day and whenever overly soiled.
Did not observe dispensers improperly stored within bulk food containers.
General sanitation and organization of facility noted satisfactory.
No signs of pest activities at the time of inspection.
