Observation (CORRECTED DURING INSPECTION): Two sausage pastry rolls were observed in the ambient display case. Ambient temperature was measured at 24 degrees C. Unable to determine internal temperature of sausage rolls as they has been discarded by the operator.
Corrective Action(s): This is a repeat violation. Potentially hazardous foods that are stored at ambient temperatures must be properly time tracked, as per your food safety plan. Potentially hazardous foods that are stored at temperatures between 4 degrees C and 60 degrees C may allow for the growth of potential pathogens and/or toxins, which may not be destroyed by reheating. Further repeat violations may result in enforcement action.

Observation (CORRECTED DURING INSPECTION): No surface sanitizer was available at start of inspection.
Corrective Action(s): A bleach water sanitizer was prepared at 100 ppm chlorine and wiping cloths were stored in sanitizer. Ensure that sanitizer is available at all times during operation. Food contact surfaces must be properly sanitized to limit potential cross contamination.

Observation: Underside of chest freezer door is broken and wires are exposed.
Corrective Action(s): Repair underside panel of chest freezer door or provide a replacement so that the surface is smooth, non-absorbent, and easy to clean. This was noted on the previous inspection report. Date to be corrected by: July 1, 2018.

Routine inspection conducted:

- 1 door reach in cooler (back) at 4 degrees C
- White mini cooler at 4 degrees C
- Silver mini cooler at 7 degrees C (ambient). Product internal temperature (milk) was measured at 4 degrees C. Mini cooler is being frequently opened and closed at the present time. Please ensure cooler is able to maintain product at 4 degrees C or less.
- Glass sandwich display cooler at 3 degrees C
- 2 door reach in cooler (front) at 4 degrees C
- 1 door reach in cooler (front) at 4 degrees C. Only non-potentially hazardous drinks along with one container of half-half cream stored at time of inspection.
- Thermometers accurate to 1 degree C are available for cooler units
- No hot holding
- Hand washing station is unobstructed. Hot and cold running water, liquid hand soap, and single use paper towels are available.
- High temperature dishwasher measured 71 degrees C at the utensil surface during the final rinse (minimum 71 degrees C)
- No evidence of pest activity noted at time of inspection
- Temperature records are available.

Note:
- A large build up of ice and debris was observed in the freezer compartment of the silver mini cooler. Defrost unit and ensure that it is cleaned and sanitized.
