* Install mouldings on the newly installed window to cover the exposed dry wall etc.
* Clean walls and the fan cover in the walk-in cooler to remove dirt and debris. (By Oct 16, 2016).
* Clean floor thoroughly to remove grease build up.
* Ensure Quats sanitizer is tested daily and maintain at 200 ppm. Refill the sanitizer spray bottles t least twice a week.
* Use only 1 teaspoon of bleach per litre of water to make 100 ppm chlorine sanitizer solution.

Walk-in cooler: 3.5 degrees C.
Line cooler below 4 degrees C.
Bar coolers below 4 degrees C.
Upright freezer below -18 C.
Hot holding of rice and potatoes above 60 C.
Dishwasher final rinse 50 ppm chlorine.
