Observation (CORRECTED DURING INSPECTION): One spray bottle of QUATS sanitizer had 0 ppm QUATS inside it. The time stamp indicated that it had been refilled at the same time as the other two spray bottles of QUATS that had 200 ppm QUATS sanitizer.
Corrective Action(s): Manager refilled 200 ppm QUATS sanitizer in this spray bottle during the inspection. Sanitizer needs to be ran a bit through the hose of the dispensing unit before 200 ppm QUATS is available. Please review with staff to use the QUATS test strips to check the sanitizer concentration when they fill up the QUATS sanitizer spray bottles.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels or air dryers.
Walk-in-cooler and other coolers were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Refrigeration units were equipped with thermometers.
Hot-held food was at or above 60 degrees C.
100 ppm chlorine sanitizer was available in the buckets with wiping cloths. Chlorine sanitizer is used to sanitize the grill surfaces according to the Manager.
200 ppm QUATS sanitizer was available inside two spray bottles. This sanitizer is used to sanitize the prep. surfaces on the prep. line according to the Manager.
3500 ppm hydrogen peroxide disinfectant cleaner was available inside two spray bottles. This is used for non-food contact surfaces according to the Manager.
200 ppm QUATS sanitizer was available in the third compartment sink unit. Note: Wash water was changed in the first compartment sink unit during the inspection since it had food debris visible inside it.
QUATS test strips, chlorine test strips, and hydrogen peroxide test strips were available on-site.
No signs of recent pest activity was evident at the time of inspection.
Ice machines were in a clean condition and scoops stored separately.
Scoops and storage containers are washed, rinsed, sanitized, and air dried every 3 hours after use.
Restaurant Manager and 7 shift managers had valid FOODSAFE equivalent course training at this facility (Foodsafetytraining.ca online Food Handler certification course).
Restaurant Manager with FOODSAFE Level 1 equivalent course training was present on shift.
