Observation (CORRECTED DURING INSPECTION): Upright glass door cooler at front was measured at 6-7C internal food temperature
Corrective Action(s): - Move tofu and imitation crab to cooler unit in the back at temperature at less than 4C. Whole cucumber and avocado can be stored in cooler
Operator mentioned that a big delivery was put in cooler.
Adjust the settings to ensure that cooler unit is capable to maintain a temperature of less than 4C

Observation: Dirt and poor sanitation observed near ice machine and in dishwashing area

Comments

- All handsinks in front area, back prep area and washrooms are supplied with hot and cold running water, liquid soap and paper towel
- Upright storage cooler, undercounter cooler in back, sushi bar cooler, small undercounter coolers(3) are measured at less than 4C
- Freezers- unright storage cooler, chest cooler and undercounter coolers in front are less than -18C
- Hot holding items are greater than 60C
- Sushi rice is less than 4.0pH
- Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing)
- Food contact surface sanitizer is measured at 200ppm chlorine residual
- All food storage practices are satisfactory
- No evidence of pest activity is noted at the time of inspection
