Observation (CORRECTED DURING INSPECTION): Tray of frozen chicken observed thawing on the floor in the back food preparation area.
Corrective Action(s): Ensure all frozen potentially hazardous foods are thawed under cold running water or in the cooler.

Observation: Automatic paper towel dispenser for kitchen hand sink not in good working order. Paper towels are not dispensed when sensor is activated.
Corrective Action(s): Operator to replace the automatic paper towels dispenser. Correct by August 17, 2021. In the interim paper towels have been placed next to the hand sink for staff to use.

Routine inspection:

Front hand sink, 2 compartment sink, and kitchen hand sink after correction provided with liquid soap and paper towels.
Bleach sanitizer solution available for use.
Dishwasher registers 50ppm chlorine during the final rinse cycle.
Front display cooler with inserts and under the counter section requires servicing. Ensure inserts that hold salad ingredients are sitting in an ice bath to ensure 4 degrees C or less.
Hot holding at or above 60 degrees C.
Preparation cooler inserts and lower section at or below 4 degrees C.
Walk in cooler at 4 degrees C.
Domestic cooler at 4 degrees C. Freezer section at -15 degrees C.
Storage area freezer at -14 to -17 degrees C.

Reminder to monitor and record temperatures of all coolers, freezers and hot holding units. Have records available for review.
