204 - Food not cooked or reheated in a manner that makes it safe to eat [s. 14(1)]
Observation (CORRECTED DURING INSPECTION): Soups in warmer had internal temperature 46.1'C~49.2'C. Staff had advised the soups were taken out from cooler to be reheated. Both soups were transferred to pots for proper reheating.
Corrective Action(s): All foods must be reheated until the internal temperature is at 74'C, before transferring to hot-holding unit. Hot-holding units (i.e. soup warmers) are not to be used for reheating purposes. Always reheat in pots on stove for rapid reheating.

Observation: Inside of drink dispensing guns require cleaning. Encrusted sugar layer observed inside.
Corrective Action(s): Ensure the both guns are cleaned/sanitized. Do this on a regular basis to prevent attracting pest (i.e. flies). [CORRECT BY: Monday, Jul 10th]

Routine inspection conducted:

-Handwash stations throughout adequately supplied.
-Refrigeration temperatures satisfactory; Hot-holding temperature satisfactory
-Buffet tables operating at required temperatures.
-200ppm QUAT available in 4 labelled spray bottles- for each area. Automated dispenser at correct concentration.
NOTE: Ensure to relabel the bottles as 'sanitizer' or 'QUAT''
-Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
-General food storage practice satisfactory.
-General maintenance and sanitation improved from last routine inspections, except mentioned above.
-Washroom handsinks satisfactory. No evidence of pest activity observed.
NOTE: Few flies observed at the front -dining area. Monitor and keep the doors closed at all times.
