Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Counters, shelves, floors, fridge handles, walls, ceilings: all covered in hardened food debris and dirt. Most surfaces do not appear to have been cleaned for some time. Many counter surfaces and fridge handles were sticky.
Correction: Clean all above surfaces thoroughly.

Follow up inspection conducted:
Sanitation throughout kitchen greatly improved
The following surfaces have been painted;
- Shelves along wall by kitchen entrance (all previous rotting shelves have been discarded)
- Walk in cooler and walk in freezer door

Cleaning of walk in freezer door has improved but there is still quite a buildup of rust (and caked on debris) that needs to be cleaned. Continually clean your surfaces to prevent accumulation of buildup.
Floor underneath cooking line has improved (operator indicates it was power washed). There is still a small pile of buildup that may need to be scraped off if it is not being removed by powerwashing.

Overall sanitation has improved, continue to clean all surfaces throughout kitchen.
