Observation (CORRECTED DURING INSPECTION): 1. Found food debris on meat slicer,and on tomato slicer.
2. Spray bottles had 50 ppm quat or less, dispenser was also less then 50 ppm quat.
Corrective Action(s): 1. Ensure all equipment is properly washed and sanitized so all food debris is removed.
2. Ensure dispenser is working properly, check daily with test strips that are on site. Air bubble removed, quat found to be 200 ppm, spray bottles were refilled.

Observation: 1. Found a few food items in the walk in cooler with out a cover.
2. Opened bags of bulk items (i.e. rice) were not in pest proof containers

2. Place opened food into pest proof containers or ensure to close packaging to prevent contamination.

- Freezer was - 13 C
- Hot holding was 60 C or hotter
- Hand sinks had liquid soap, paper towel, hot and cold water
- Dishwasher had a final rinse of 85 C at the gauge, and 73.5 C at the plate
- Glass washer had a final rinse of 25 ppm Iodine
- No signs of pest activity noted during inspection
- General sanitation is satisfactory, a little attention required to spice trays in the dry storage
NOTE: light cover required for middle light fixture in the food prep area, use either tubes for the lights, shatter proof light bulbs, or proper cover.
