301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): The surface sanitizer had 0 ppm chlorine solution. The operator stated that the surface sanitizer is changed every three days.
Corrective Action(s): The operator prepared fresh sanitizer at 100 ppm chlorine solution. Change the solution daily to ensure effectiveness of the sanitizer solution.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1) There was no paper towels inside the dispenser at the front handwashing station.
2) There were utensils (ie. spoons, forks) inside the main handwashing sink in the back kitchen.
Corrective Action(s): 1) The operator provided paper towels. Ensure the stock all handwashing stations with soap and paper towels.
2) Do not store any utensils or equipment inside the handwashing sink. Keep the sink clear and empty. This is designated for handwashing only.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Multiple food items stored inside the prep, upright coolers uncovered.
2) Food items covered with wiping cloths. This is a repeat violation.
Corrective Action(s): Cover all food items with proper lids or plastic wraps. Do not use non food grade cloths to cover food items. Repeat violations will lead to stricter enforcement.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of grease, dirt, and food debris in the following areas:
- dry storage area, containers for dry food items are in poor sanitary condition
- around the main grill
- wire racks in the dry storage area
- there was pooling of water in front of the high temperature dishwasher
Corrective Action(s): Clean the areas noted above. Maintain good sanitation throughout the kitchen and implement a regular cleaning schedule.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The single door of the upright cooler at the entrance to the kitchen does not seal properly.
2) The doors of the upright cooler near the back handwashing station does not seal properly.
The operator was using large buckets to close the doors of the coolers.
Corrective Action(s): Fix or replace the doors or install locks that fully seal the doors of the upright coolers.

Comments

- General sanitation needs improvement. See violation section.
- All coolers (upright, undercounter, prep) < or = to 4C
- All freezers (chest, upright) < or = to -18C
- You must begin a daily temperature log for all coolers and freezers. Temperature log template was provided to the staff.
- High temperature dishwasher (stationary) achieved 79.9C at the plate's level during the final rinse cycle.
- Three compartment sink available for manual dishwashing of large pots. Drain plug and sanitizer available at 100ppm bleach solution. Do not store any dirty dishes or equipment inside the sanitizing compartment of the sink.
- Dry storage area needs cleaning. See violation section. Rewash and re-sanitize all the dry storage containers.
- No signs of pest activity.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.
Note: FOODSAE certificates obtained prior to July 29, 2013 expires on July 29, 2018. Must take refresher course to receive recertification.
