Observation (CORRECTED DURING INSPECTION): Quat sanitizer in three compartment sink and in buckets measured > 500 ppm. Manufacturer's instructions indicate 200 ppm to be the correct concentration for sanitization without needing a rinse step.
Corrective Action(s): Discard/dilute the existing Quat sanitizer. Ensure sanitizer is at 200 ppm. Follow manufacturer's instructions to prepare sanitizer at the correct concentration.

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers are < or = 4C
- Small freezer is < or = -18C
- Hot holding units (rice, steam table) are > or = 60C
- Three compartment sink is available for manual dishwashing. Except for the preparation of sanitizer, operator was able to describe manual dishwashing procedures correctly.
- 200 ppm Quat sanitizer is available in three compartment sink and buckets with wiping cloths (after correction).
- Food containers are covered
- Ventilation hood is maintained
- Ice machine is maintained. Ice scoop is stored in a sanitary manner.
- No signs of pests observed during inspection
