Observation: Three bags of seasoning noted being stored outside of the storage containers on the shelf in the storage room upstairs.

Observation: Mice droppings noted around the grease trap and under the storage shelving across from the 3-compartment sink. A pest control company is on contract.

General Comments:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Temperature logs were being maintained.
Foods in the hot holding unit were over 60 degrees Celsius.
First batch of meat patties are probed and the temperature recorded.
Condiments were time stamped. Timer used for bacon.
Hand sinks were stocked with liquid soap and paper towels.
200ppm Quats was available for sanitizing.
Three compartment method of manual dishwashing is being employed.
Mgr on duty had FS level 1 certification (expires Oct. 10, 2028).
Exhaust hood had been serviced
Pest control company is on a monthly contract.
Storage Room upstairs: The cooler was at 4 degC; Freezer at -18 degC. THE TEMPERATURE OF BOTH WERE NOT RECORDED YESTERDAY. ENSURE STAFF ARE CHECKING AND RECORDING TEMPERATURES DAILY.
