- Floors and walls behind ice machine and gas canisters.

- Handsinks (unless otherwise mentioned) are accessible and are provided with hot and cold water, liquid soap, and papertowels.
- Staff washroom sinks are accessible and have hot and cold water, liquid soap and papertowels to facilitate handwashing practices.
- Coolers are maintaining acceptable temperatures (≤4C).
- Freezers are maintaining acceptable temperatures (≤-18C).
- Hot Holding Units are maintaining hot potentially hazardous foods at acceptable temperatures (>60C).
- Food storage practices appear satisfactory. Storage is organized, food is protected from contamination.
- Cooled food (rice, pasta, corn, meat patties) in walk-in cooler: <4C. Food is cooled in small amounts in shallow trays.
- Cutting boards at cook and prep line have been recently resurfaced.
- Interior of ice machine and ice storage bins appear maintained in a sanitary condition. Ice scoop is stored outside ice machine in a sanitary manner.
- Cook and prep line utensils stored in ice water between uses.
- Dipper well is operational.
- Wiping cloths stored in 200 ppm QUATS.
