Corrective Action(s): Operator cooked cut ribs about an hour ago -placed the cut ribs on a large baking pan to cool

You must cool foods health safely:

Step 1: 60 deg C to 20 deg C within 2 hours
Step 2: 20 deg C to 4 deg C within 4 hours

Operator to provide Food Safety Plans for both food items for review

Observation (CORRECTED DURING INSPECTION): Cooked cut potatoes stored at room temperature next to preparation cooler -internal temperature at 25 deg C and have been there >2 hours as per operator.

Operator is not cooling the cut potatoes properly.

Observation: Mouse droppings AGAIN observed in the majority parts of the kitchen:
-dry storage area behind the rodent proof containers on all shelves
-preparation area shelves behind equipment
-cooking line area shelves amongst the dishware and foods are
-area outside employee washroom -equipment stored and accumulated where I cannot inspect

Unknown if these are fresh droppings from the morning or from last month as the operator is not maintaining the DAILY cleaning schedule

Last Atlas Pest Control report May 10, 2023 indicates 7 mice being caught
Corrective Action(s): Operator is to close the restaurant immediately to conduct the cleaning and sanitizing of the facility.
Ensure all lightly packaged foods are in rodent proof containers
Have your pest control come in for reinspection and work report ready for follow-up inspection

Due to the present and recent Closure/Correction Orders and High Risk Ratings for routine inspections you have been cited in the last few years a Compliance Meeting is required. A letter will be provided shortly overviewing the meeting and when it will be scheduled at the Health Office
