Walk in cooler was repaired and was at 1C. Ensure temperature of walk in cooler is monitored regularly to ensure it is always 4C or colder. Upright freezer was at -2C. Operator reported that it was recently repaired/adjusted and temperature will be decreasing. Hot holding unit has been replaced. Pizza in new hot holding unit was being held at 65C Cardboard boxes which were being used to store utensils and line shelves have been removed *Operator is proposing changes to menu. Prior to changing menu, these changes require approval and food safety plan will need to be updated. Submit proposed updates to food safety plan and proposed changes for review.
