Observation: Floors appear slippery and greasy.
Grease on floor and trays in grill area.
One mouse snap trap is at the back of grill area, grease on its surface.
Black residue along baseboards in dry storage and dishwashing area.
Corrective Action(s): Remove snap trap.
Replace with appropriate, enclosed traps supplied by a pest control contractor.
Ensure grease trays are cleaned on regular basis, ideally every day.
Use a strong degreaser for cleaning of floors in kitchen and under grill area.
Thoroughly clean corners, along baseboards in dry storage and dishwashing area.

Comments

Hand wash stations adequately supplied with hot and cold running water, liquid soap and paper towel in dispensers.
Designated serving, cooking and dishwashing staff with separate tasks.
Staff had hair tied back and clean aprons.

Slicer was being taken apart and cleaned in place at the time of inspection with warm, soapy water.
Bleach sanitizer in spray bottle available for sanitizing.
Sanitizer >200ppm. Recommend diluting sanitizer to 100ppm to reduce chemical residue on food contact surfaces.
Dishwasher hot water sanitizing cycle >71C.

Hollandaise sauce, small quantity, in pot was being cooled with ice bath in bus bin at the time of inspection. Cooling appeared to be monitored by staff.
Probe thermometers available.
Coolers <4C.
Freezers <-18C.
Upright freezer has >1in thick ice build up on shelves. Recommend defrosting to rid of ice to allow adequate and efficient air circulation and cooling.
