Observation (CORRECTED DURING INSPECTION): The following items were located within the under counter cooler and were measured at an internal food temperature of 13 degrees C:
1. Large food insert of cooked chicken
2. Large food insert of veggie patties
3. Small food insert of sausages
Corrective Action(s): Items were discarded by staff at the time of inspection. Ensure that potentially hazardous (perishable) food items are maintained at 4 degrees or less to limit growth of potential pathogens and/or toxins.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): One spray bottle labeled as sanitizer was measured at a concentration of 100 ppm quats.
Corrective Action(s): Bottle was emptied, refilled at the sanitizer dispenser, and re-measured at 200 ppm quats. Ensure sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats). Verify with test strips and change as often as needed to maintain these concentrations.

Observation: 1. Under counter cooler ambient temperature measured at 13 degrees C.
2. No cold water available for two compartment sink.
Corrective Action(s): 1. Ensure under counter cooler is capable of maintaining foods at 4 degrees C or less. Have cooler serviced. Date to be corrected by: June 25, 2019.
2. Ensure cold water is available at three compartment sink. Date to be corrected by: June 25, 2019.

Routine inspection conducted:

- Walk in cooler at 4 degrees C. Food is covered and stored off the floor.
- Sandwich preparation table inserts at 4 to 5 degrees C*
- Beverage cooler at 2 degrees C
- Walk in freezer at -14 degrees C*
- Hot holding internal temperatures at 60 degrees C or more
- Hand washing station unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels
- Staff were observed practicing proper hand washing and glove use
- Three sink plugs available for manual ware washing sinks
- Quaternary ammonium compounds (quats) sanitizer tested at 200 ppm from dispenser and in sanitizing bucket
- Utensils and equipment are stored in sanitary condition
- General sanitation excellent. No signs of pest activity observed at time of inspection.
- Temperature and sanitation records are maintained.
- FOODSAFE requirements met at time of inspection. FOODSAFE certificate presented at time of inspection is valid to September 15, 2023.
- Permit posted at front
*Ensure internal food temperatures are maintained at 4 degrees C or less for chilled food and -18 degrees C or less for frozen food. Reminder to ensure that sandwich table cover is closed when not in use and reminder to adjust/repair freezer if internal food temperatures are not maintained at -18 degrees C or less.
Note: Thermometer located in under counter cooler was displaying approximately 4 degrees C; however, thermometer was observed to be stuck to a small patch of ice on back wall of cooler. Ensure a thermometer accurate to 1 degree C is available for this unit and is situated so as to be representative of the overall air temperature.
