Observation (CORRECTED DURING INSPECTION): OBSERVATION
Sink plugs were not available in the 2-compartment sink.

Corrective Action(s): CORRECTIVE ACTION
Purchase 2 sink plugs in order to properly wash and sanitize
dish wares. Until 2 sinks plugs are purchased, use big pots/buckets
for the sanitization step. Soak utensils in a bleach solution
with 100 ppm chlorine level (1/2 tsp in 1 litre of water).

* NOTE : Manual ware washing was discussed with the operator.

* GENERAL COMMENTS
> Sanitation and Hygiene
- All hand sink stations were adequately supplied with liquid hand soaps,
paper towels, and running hot and cold water.
- Sanitizer spray bottle with chlorine solution measured 200 ppm.
- 2 - compartment sink was available and supplied with hot and cold
water.
- Adequate supply of bleach was available.
- No pest activity observed during the inspection ; Pest control company comes in once a month.
- General sanitation was satisfactory.
- All foods were stored above the ground ( at least 6 inches high).

* NOTE : Pizzelle Pals' products were found on top of the display cooler.
EHO talked to the owner and called the producer. Producer said products were made in an
approved kitchen.
