Comments

- Donair cone was being put together at time of inspection. Ensure prep is completed within 2 hours, and clean and sanitize sink after use.
- Shaved meats in hot holding units were at 60C. Operator stated all shaved meats were cooked on grill top first, then placed in preheated hot holding unit. Reminder that meats must first be cooked/reheated to at least 74C.
- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm in spray bottle and in sanitizing sink
- All coolers were at 4C or colder
- All freezers were at -18C or colder
- Accurate thermometers available for use
- Food storage practices very good. All food stored off the floor and properly covered.
- General sanitation good.
- No signs of pest activity noted
