Observation: Upright freezer's at -5 degC. Some of the breads in the freezer are not frozen. There's a warning sign inside on the panel that's flashing "vacuum condenser". Get this looked into. Monitor the temperature of the freezer to see if it goes down.
Corrective Action(s): Move any PHF's into the chest freezer and don't store these foods in this freezer. Store only breads, frozen fruit, etc in this freezer until it can maintain a temperature of -18 degC or below.

-Hand sink's fully equipped.
-200ppm bleach sanitizer is available in a spray bottle.
-Temperature log's being maintained
-Dishwasher rinse has 50-100ppm chlorine
-Roast pork was cooling on the counter. Temperature was 75 degC. Operator had a note on it to place it inside the cooler within 2 hours.

GET THE EXHAUST HOOD SERVICED SINCE IT'S DUE.
