Follow up inspection:
-Magnetic strip was purchased to store knives.
-Digital probe thermometer was purchased and available on-site.
-Cooking, hot-holding, and cooling temperatures were reviewed with the Operator.
-100 ppm chlorine sanitizer was setup in the sushi bar.
-Operator had staff setup a fresh solution of 100 ppm chlorine sanitizer in a bucket with a wiping cloth in the kitchen during the inspection.
-Make sure the chlorine sanitizer and wiping cloth is changed frequently throughout the day to maintain 100 ppm chlorine sanitizer.
