- Hand wash stations stocked with liquid soap and paper towels
- Prep cooler ambient air temperature below 4 degree Celsius
- Walk in cooler ambient air temperature below 4 degree Celsius. All raw meats must be stored below raw vegetables and potentially ready to eat foods.
- No Hot holding at the time of inspection
- Dishwasher final rinse has 50 ppm Cl. Only use chemicals recommended by the manufacturer / supplier.
- 100 ppm Cl solution prepared during the inspection
