Observation: 1. A small water leak was observed behind the dishwasher area and water was pooling under the 2 compartment sink. Cleaning and repair is needed.
2. The fumehood servicing date on sticker is required by July 12, 2023. Cleaning and servicing is required to prevent grease build up and risk of grease fires.
Corrective Action(s): Clean and service above items as needed. Correction required in one week. Clean water build up often to prevent slips and food contamination.

Observation: Some cooking spatulas were held together by duct tape. Replacement of poor condition utensils is needed.
Corrective Action(s): Ensure all cooking equipment and utensils are in good working order. Cooking tools and contact surfaces must be durable, easy to clean, non-toxic and a smooth non-absorbent surface. The duct tape does not meet this requirement and a replacement is required. Correction required today.

Ice machine is sanitary with dedicated hand scoop. Ice cream scoops held in cold running water.
Take out containers and utensils are sanitary.
Quat sanitizer in use at 400 ppm in back kitchen and front dining area.
