Observation: There is missing light cover over the dry storage area in the back beside the office.
Corrective Action(s): Replace missing light cover or sleeve for the exposed fluorescent light bulbs.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There is debris accumulation underneath prep tables and underneath shelving units in the walk-in cooler/freezer as well as the shelves in the back. Also, ice machine needs to be cleaned thoroughly.
Corrective Action(s): Clean kitchen area thoroughly and paying special attention to underneath prep tables and equipment. Remove grease build up in the cooking area. Walk-in freezer shelf needs to be pulled out and cleaned as there is thick layer of food debris. Overall sanitation of the kitchen area needs to be improved.

Refrigeration temperatures were at 4 deg C or less.
Cold foods were stored at 4 deg C.
Frozen foods in the freezer stored was at -18 deg C or less.
PHFs thawed properly (under cold water that is changed constantly).
Temperature log was available and up to date.
Hand wash sinks accessible, in good repair and stocked properly.
Wiping cloths stored in sanitizing solution (bleach at >100 ppm).
Dishwasher had chlorine residual of >50 ppm.
Bar area:
Hand sink stocked with liquid soap and paper towels.
Glass ware washer had chlorine residual of 50 ppm.
Sanitizer bucket had 100 ppm bleach.
Coolers were at 4 deg C.
For follow up inspection, provide copy of most recent pest control report.
Ice machine must be cleaned and sanitized on a regular basis (i.e every 2-3 weeks).
This should be included in the sanitation schedule.
