Observation: - Found 2 dead mice on the floor under the dishwashing areas. Mice carry disease and contaminate food when the walk on surfaces.
Action: Remove the mice and wash & sanitize the surfaces with soap, and bleach + water. Contact a pest company to eliminate to mice.

Observation: Found openings + holes in the wall under the 2-comp sink dishwasher and behind storage fridge in prep area. The holes are allowing mice in.
Action: Block all holes with metal to prevent entry.

Observation: Food + grease have accumulated on cupboards, shelves, in corners and around food containers.
This will attract pests.
Action: Clean and sanitize these areas to remove the food and grease.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The high termperature dishwasher must manually be held in the rinse cycle for dishes to be come sanitized. this is inefficient and the dishwashrer is not operating as per manufacturers specifications. Staff could not hold the button down long enough (at least 15 seconds)
Action: Fix, replace or lease a new commercial dishwasher so dishes are washed + sanitized by pushing "start" button.

Observation: Found rodent bait/poison under and behind counter tops in the back prep area. The poison will contaminate food when rodents touch + eat it, then they spread the poison to food from their feet.
Action: Immediately clean up the poison and discard it. Only use mechanical measures to eliminate rodents.

- Hand sinks stocked with liquid soap, paper towels and running hot + cold water
- High temp d/w had rinse cyclel temp. of 72.5C at plate's surface
- Foods stored in food grade containers; covered; in groups w/proteins separate from RTE foods; and 6" off the floor on shelves + platforms.
- No expired foods in use or for sale. FIFO rules followed.
- Foodsafe certified staff present.
- Obtained cheque for operating health permit fees in the amount of $150. (cheque #0094)
- Permit to operate granted.
