Corrective Action(s):
Ensure to measure food temperature in cooling casings twice daily and record tempeature in your temperature log sheet. Ensure to keep the log updated.
Ensure to measure food temperature in hot holding unit at least twice daily preferebly every 4 hours. Maintain records updated. If food being hot held, is below 60C(140F) for more than 2 hours discard food.

- Hand washing stations maintained.
- Walk in cooler measured at or below 4 degree C. Cooling units measured at or below 4 degree C. See notes above regarding temperature recording.
- Soup in hot holding unit is to be kept at or above 60C(140F). See notes above regarding temperature monitoring.
- Quat 200-400 ppm sanitizer available in spray bottles. Ensure to obtain testing kit to measure QUAT concentration.
- General sanitation:
-- Floor is to be kept clean and free of food debris. Hard surfaces are to be maintained clean and free of soil and build ups.
- No sign of pest activity noted at this date.
- 3-comp sink available to wash and sanitize implements.
- Staff were food safe trained.
