Routine Inspection Conducted:

1. Temperatures:
- 2-door stainless steel cooler #1 beside 2-compartment sink at 3'C
- 2-door stainless steel cooler #2 at 4'C
- 2-door stainless steel freezer at -18'C
- Undercounter freezer in cooking line at -18'C
- Undercounter cooler in coooking line at 4'C
- Undercounter cooler at service area at 4'C
- 2-door glass freezer at front at -18'C
- All hot-holding units measured at >60'C
- Temperature logs maintained for all cold and hot-holding units and verified during inspection

2. Sanitation
- General sanitation of premises satisfactory during time of inspection
- Hand washing stations in back prep area and in kitchen supplied with liquid soap, paper towel, hot and cold running water
- Washrooms kept in sanitary manner
- High temperature dishwasher reached 77.1'C at plate surface (above minimum required temperature of 71'C)
- QUATS sanitizer buckets with wiping clothes measured at 200 ppm QUATS concentration with test strip
- Drink dispenser knobs kept in sanitary condition - operator mentioned the knobs are cleaned and sanitized each day

3. Storage:
- All food observed covered and stored at least 6 inches off the floor
- Chemicals stored away from food
- Stored foods are labelled with time stamps to practice first-in-first-out method

4. Pests:
- No signs of pests during time of inspection
- Pest company completes monthly inspections. Pest reports verified during time of inspection

5. Administration:
- FOODSAFE Level 1 trained staff on premises during time of inspection
- Operating permit visible during time of inspection
