Observation (CORRECTED DURING INSPECTION): Ambient air in preparation cooler was recorded to be 11.6C after leaving probe thermometer in for >5minutes. Operator moved food items into other coolers that were at 4C or lower.
Corrective Action(s): Ensure to routinely check temperatures of all coolers and freezers to determine if they are in operating as intended. Operator told not to use preparation cooler until unit is repair or replaced.

Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer bucket had 0 reading of chlorine during inspection. Operator added capful of chlorine bleach to reach 200ppm. Operator tested with their own test strips as well
Corrective Action(s): Ensure sanitizer solution is between 100-200ppm chlorine at all times.

- Hot/cold water, liquid soap, and paper towel available **Paper towel must be in paper towel dispenser**
- 3 compartment sink available, not in use during inspection ; reviewed dishwashing procedures with operator and provided signage for manual dishwashing
- 2 upright cooler/freezers in the front of house area; coolers were 4C or lower, freezers were -18C or lower
- 2 chest freezers were -18C or lower
- 1 cooler/freezer in kitchen was 4C/-18C or lower; display cooler was 4C or lower
- No evidence of pest activity during inspection
