- Hand sinks are equipped with hot & cold running water, liquid soap and paper towels
- Time monitoring system for foods left at room temperature is followed
- Temperatures of refrigeration units meet regulatory requirements (<4C coolers, <-18C freezers)
- Temperature log is in place. Temperatures of incoming supplies are recorded.
- 100ppm chlorine residual detected at low temp. dishwasher
- 200ppm QUAT sanitizer used for sanitizing trays
- 100ppm chlorine residual detected at recently changed sanitizer buckets
- Utensils are washed & sanitized in the dishwasher every 4 hours
- Hot holding foods (chicken) probed & measured >60C
- Pest control by a professional company on a monthly basis. Minor ant issues at the moment. The operator discussed cleaning protocol for bar area where syrups are.
- Ice machines are maintained in a sanitary manner
