200ppm quats available for use with wiping cloths stored in solution when not in use.
Under the counter cooler at 4 degrees C.
Cooking area hot holding units all at or above 60 degrees C.
Condiment tracking sheet maintained.
Upright cooler at 4-5 degrees C.
Upright freezer at -11 degrees C. Monitor and ensure -18 degrees C or less.
