Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine sanitizer was available inside one of the two chlorine sanitizer spray bottles.
Corrective Action(s): Manager setup 100 ppm chlorine sanitizer in the second spray bottle. Ensure 100 ppm chlorine sanitizer (1/2 teaspoon bleach per L of water) is available to sanitize surfaces.

Observation: Rodent droppings were observed in the following areas:
-Storage cabinet below the microwave. Note: No damage to the extra prepackaged single-service service utensils in the unopened boxes was observed.
- Floor behind both chest freezers
-Floor near the hot water tank in the staff washroom.
Corrective Action(s): Ensure the affected areas are sanitized with bleach water (1 part bleach with 9 parts of water) and then wiped to remove the rodent droppings; Correct immediately for the cabinet. Clean and sanitize the other affected areas later today. Manager showed that he has sealed one hole at the facility near the seating area approximately 3 weeks ago. Manager informed he has been checking the mechanical traps himself and replacing the glue-boards. Dry goods were inside covered pest proof containers.

Monitor for signs of recent pest activity and continue with pest control measures:
-Keeping the front door and backdoor closed between use
-Sealing any potential entry points
-Regular cleaning to prevent possible breeding grounds for pests
-Regularly checking mechanical traps and re-servicing them. It is recommended to use a professional pest control company
-Protecting dry food and utensils from potential contamination.

Comments

-Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
-Manager was observed washing his hands properly during the inspection.
-Walk-in-cooler (measured at 1.6 degrees C), prep. cooler (measured at 2.1 degrees C), and second prep. cooler (measured at 1.9 degrees C) were at or below 4 degrees C. These coolers were equipped with thermometers.
-Beverage coolers were at or below 4 degrees C (measured at 1.6 degrees C and 3.4 degrees C respectively).
-Both chest freezers were at or below -18 degrees C.
-Broilers were turned on.
-Shaved meat from the cones was undergoing a secondary cook step on the grill-top (for chicken) and the microwave (for beef and lamb).
-Hot-held donair meat was at or above 60 degrees C.
-Cooking sign had been updated to cook the ground beef to at least 74 degrees C by the Manager (minimal internal temperature of 71 degrees C is required).
-Raw meat was stored separately from ready-to-eat food inside the walk-in-cooler.
-100 ppm chlorine sanitizer was available inside the second labelled spray bottle.
-2-compartment sink was supplied with hot and cold running water. Two sink plugs were available.
-Manager on shift had valid FOODSAFE Level 1 refresher course training (expiration date: July 17, 2023).
