- Manual Dishwashing: 4 Step Method (Procedures posted.) Ensure all food contact surfaces are washed and disinfected after use or on a timely manner. (ie: 4 hours)
-> Wiping cloth storage: Wiping cloths are to be kept completely submerged in a sanitizer at all times. (Quats) Ok.
