Observation: Ice machine had what appeared to be a line of mildew located in back left corner of ice storage compartment.
Corrective Action(s): Ensure ice is discarded and internal components of machine are properly cleaned and sanitized. Date to be corrected: Today.

Observation: Approximately 75% of gasket has separated from the bottom edge of the front ice machine panel.
Corrective Action(s): It was stated that facilities has been notified of the issue. Ensure that gasket is in good working order as pieces of gasket may break off and potentially contaminate ice. Date to be corrected by: January 7, 2018.

Comments

Routine inspection conducted:

- Coolers at 4 degrees C or less
- Freezers at -12 to -27 degrees C
- Cold holding units equipped with thermometers accurate to 1 degree C
- Potentially hazardous food items in display cabinet are display only
- Food items were observed to be within discard/best before days
- A two-hour timer is available for small wares changes
- Quaternary ammonium compounds (quats) sanitizer was tested at 200 ppm in labeled buckets at front and from dispenser at three-compartment sink. Wiping cloths stored in sanitizer. Quats test strips are available and within expiry.
- High temperature dishwasher measured 73 degrees C at utensil surface during final rinse (minimum 71 degrees C at utensil surface)
- Ice scoops stored safely. Front ice bin in clean condition.
- Hand washing stations (front, back) are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels
- Staff observed to be properly washing hands
- Temperature records are available and up-to-date.
- FOODSAFE requirements met at time of inspection. FOODSAFE equivalent certificate produced by staff is valid to 2023.
- Premises is serviced by a pest control operator on a monthly basis. Most recent service report that was reviewed indicated some small fly activity at drains. Reminder to continue to follow pest control operator recommendations (clean all drains and remove all organic build up to control fly activity). It was stated that bleach is being poured down drains and mop heads removed from mops at end of night to limit fly populations. A fly catcher is located away from food storage. No flies observed in vicinity of back area drains (mop sink, ware washing).
