Front:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Sushi coolers and front coolers maintained below 4 degrees Celsius.
Freezers maintained below -18 degrees Celsius.
Hot holding for miso soup maintained above 60 degrees Celsius.
- Concentration of chlorine sanitizer in spray bottle = 100 ppm.
- Ice machine clean. Ice scoop stored in designated container.
- pH level of sushi rice measured at 4.0 at the time of inspection.

Back:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers (prep and sliding door) maintained at or below 4 degrees Celsius.
Freezers (chest, stand-up and undercounter) maintained below -18 degrees Celsius.
Hot holding for rice maintained above 60 degrees Celsius.
- 3-compartment sink available for manual warewashing. Sink plugs available.
- Concentration of chlorine sanitizer for manual warewashing = 100 ppm.
- High temperature dishwasher sanitizing with 77.9 degrees Celsius at dish level after final rinse cycle.
- Back door open but screen door closed and fully intact.

Overall:
- Hand sink in staff and customer washroom fully equipped with liquid soap, paper towels and hot/cold running water.
- All food items stored off the floor.
- No signs of pest activity at the time of inspection.
