Observation (CORRECTED DURING INSPECTION): Sanitizer buckets and the sanitizer dispenser next to the dishwasher were tested and had 0 ppm DDBSA/ Lactic Acid. It was observed that the concentrated sanitizer solution was empty. It was replaced and had 272/704 DDBSA/ Lactic Acid after re-testing.

Comments

-Staff were not testing the glass washer correctly. Reviewed how to test the glass washer Iodine concentration with the manager and staff.
-Enure that any foods that are kept on ice have ice filled up to the top of the container.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher reached > 71 C at the plate level.
The glass washer had 12.5 ppm Iodine.
Lactic Acid/ DDBSA sanitizer solution was measured at 700 ppm DDBSA/ 1875 ppm Lactic Acid.
No evidence of pests.
General sanitation was satisfactory.
