Observation: A plastic tray for ready to eat food, which stored in the wash compartment with dirty dishes of the three-compartment sink, has been used as a clean tray for freshly cooked food (a staff member just take the dirty tray and "showered" it).
Corrective Action(s): Immediately. Return dirty tray back in the dishwashing area.Use clean tray for food. The dirty tray must be properly cleaned and sanitized before use.

Observation: Boxes with food stored directly on the floor in the walk-in cold units.
Small plastic pallets were all over the walk-in freezer.
A plastic tray with bans stored directly on the floor in the walk-in freezer.

Corrective Action(s): Do not store food on the floor of the walk-in cold units (the floors are dirty so having boxes on the floor, if you pick that box up set it on the table/prep. area, then you're tables/prep. areas contaminated). If you mop the floor, the boxes might get wet and then you have a place for more bacteria to harbor.

Observation: Food debris on a wall (storage area/front two storage shelves); on the floor in the walk-in cold units, under the delivery belt, downstairs storage area; single use utensils covered a hale on the wall in the staff washroom (F); strop around the pop dispensers shelves; some debris under storage shelve in the upstairs walk-in cooler.
Corrective Action(s): Deep cleaning is required.
