Observation (CORRECTED DURING INSPECTION): Large container of raw chicken left out on counter. Operator claimed it had been there one hour. Internal temperature observed to be 21.8C. This temperature is permissive for pathogenic bacteria to grow. Food discarded. In the future, please store raw meat products in a shallow container in a cooler below 4C to ensure proper cooling and storage temperature.
