209 - Food not protected from contamination [s. 12(a)] Observation: Damp rag was used to cover vegetable products on the prep-line. Dry rag used to handle hot items was stored along the service line for cooked foods. Corrective Action(s): To prevent contamination of food product, use a single use material to cover the vegetable products. Rags are not to be stored directly on food service or processing area. Routine inspection conducted and the following were noted: Chlorine dishwasher achieved a final rinse concentration of 100ppm. All cooler units 4C or below. Cold holding temperatures measured and recorded daily. Hot holding of food at least 60C. Walk-in freezer at -18C. Hand washing stations satisfactory. All food items stored at least 6 inches off the ground and properly covered. Facility has a monthly contract with a pest control company and pest reports were available. Pest reports indicated a minor cockroach infestation. Ensure the pest control company continue to take the necessary for remediate actions to rectify the pest problem. General sanitation satisfactory. Iodine washer in the bar area achieved a concentration of 12.5ppm. Vacuum packaging machine on-site but currently not being used. Quats dispenser at 200ppm.
