Observation: 1. Found package of muffins in the fry hopper
2. Found coffee cups sitting with business end on the floor.
3. Found boxes of food items in the Walk-in freezer uncovered
4. Found the meat cooler at the end of the cook line to be open and not in use at time of inspection
Corrective Action(s): 1. The packaging of muffins may not be maintained in a sanitary manner, do not store directly on food (i.e. fries)
2. Store all food and food contact surfaces at least 6" or 15 cm off of the floor.
3. Ensure all food is properly covered by closing lids or boxes when the food is put away to prevent contamination.
4. Ensure all cooler/freezer doors are closed when finished with removing or adding food items.

Observation: Heavy grease build up noted behind, under and in between grills and deep fryer. Also noted heavy build up of ice and food in the walk in cooler under the bottom crates.
Corrective Action(s): A thorough cleaning of all hard to reach areas is required, especially in the above noted areas.

Observation: 1. milk dispenser and overhead cooler were at 8 and 9 C
2. thermometer is missing on meat freezer at end of cooking line
3. insulation on piping in the walk-in cooler and freezer is damaged exposing insulation materials
4. double check valve over mop sink appears to be leaking.
Corrective Action(s): 1. Have both the milk dispenser and overhead cooler repaired so they can maintain 4 C or colder at all times.
2. Replace missing thermometer on freezer
3. Repair insulation on piping in the walk-in cooler and freezer to prevent potential contamination of food.
4. Have leak repaired on plumbing above mop sink to prevent the harborage of pests. (i.e. water source)

- reach in freezers were all - 14 C or colder
- hot holding was 60 C or hotter
- Hand sink had liquid soap, paper towel, hot and cold water
- wiping rags were in 100 ppm chlorine
- 3 compartment sink had 200 ppm quats
- no signs of pest activity noted during inspection, pest conttrol is on contract
NOTE: found hot holding trays stacked on drain board. Need to ensure items are fully dry before stacking. Installing wire racking above the 3 compartment sink to allow for equipment to be properly air dried.
