Observation (CORRECTED DURING INSPECTION):
There is food stains and accumulated food debris and grease in areas of the premises. This will attract pests. The areas of concern are:
- Walls behind and beneath food preparation tables, grill area, and prep sinks.
- Floors under the grill area, gas burner, and equipment.
- Prep table and storage rack legs, shelves and surfaces.
- Exhaust canopy filters and canopy.
- The walls and shelves inside the domestic fridge that stores the skewers.
Corrective Action(s):
Scrub the mentioned areas with hot water, soap and bleach to remove the grease and food debris. Ensure this is completed on a daily basis to prevent the build up of grease and food debris. During the inspection, staff and owner started cleaning the areas.

Observation:
The owner does not possess a valid FoodSafe level 1 certificate. The owner requires to have a valid certificate, so they are able to instruct staff on the safe processing of foods.
Corrective Action(s):
Successfully complete the FoodSafe Level 1 refresher course and obtain a valid certificate. Go to www.foodsafe.ca to register.

Observation:
Staff member (owner's mother) has an expired FoodSafe certificate. When the owner is not present, there must be one person in the restaurant that possesses a valid FoodSafe Level 1 certificate.
Corrective Action(s):
Register and successfully complete the FoodSafe Level 1 refresher course online. Go to www.foodsafe.ca to register for the course.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -17C; hot holding units above 60C; and thermometers present.
- Hand sink stocked with liquids soap, paper towels, and running hot and cold water.
- Low temperature dishwasher rinse cycle had [Cl2] of 100ppm. Test strips present and shall be used daily to monitor for the strength.
- Foods stored in food grade containers; covered; stored in groups with raw meats separate from RTE foods; and 6" off the floor on shelves.
- General sanitation level is adequate, but improvement needed in the mentioned areas.
- The exhaust canopy is scheduled to be professionally cleaned in Nov. 2018. Ensure to contact the company and have his completed prior to the next routine inspection.
- No signs of pests. The back door was propped open, but a screen door was installed.
- No expired foods found. FIFO rules being followed.
- Utensils used to handle food.
