Observation (CORRECTED DURING INSPECTION):
1. In the kitchen, stand up cooler unit was 8-10C; shredded cheese 10C; ham 10C; bags of milk 8C; cheese slices 7.4C.
Large container of eggs just received from delivery.

2. In the front side, foods were marginally 4C at the display cooler. A cover/door was not used on this cooler.

Corrective Action(s):
1. All potentially hazardous foods that were time/temperature abused were discarded.
Container of eggs relocated to a functional cooler.

2. A plastic pull-down curtain was utilized to better maintain cool air.
Implement the 2 hour rule for potentially hazardous foods that cannot be maintained 4C or below. (Immediately).

Observation: At the warehouse storage area, single-use food contact packaging was open and exposed to potential contamination in the environment.
Corrective Action(s): Protect open food packaging material from contamination; store them in clean bags/container once opened; do not store open packaging material in the warehouse. (1 day).

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1. Debris/grease noted on dishwashing drying racks.
2. Accumulation of debris/dust/grit observed on walk-in cooler and walk-in freezer floors.
3. Plastic mesh cover/curtain for the baked goods/muffin on trolley was unclean.
4. Accumulation of debris/grit observed along floor coving, behind equipment, and hard-to-reach areas throughout the facility.

Corrective Action(s):
1. Staff began to clean the racks. Clean and sanitize drying racks more thoroughly and frequently (1 day).
2. Clean walk-in cooler and freezer floors more thoroughly and frequently (1 week).
3. Clean and sanitize mesh cover/curtain more frequently (2 days).
4. Clean the indicated areas more thoroughly and freqeuently (1 week).

- Food at prep line inserts were time controlled
- Handwashing and glove use policies in place

- No signs of pest activity observed; contracted pest control company provides service routinely
