Observation: - Mouse droppings noted on floor behind kenmore freezer in storage room where freezers are located.
Corrective Action(s): - Clean up droppings and disinfect area.
- Remove all debris from behind freezer. Numerous items have fallen behind the freezer. This can create runways and harbourage areas.
- Continue to monitor this area for further activity. Notify pest control company if activity persists.

Comments

- General sanitation of food premises satisfactory
- Handsinks supplied with hot and cold running water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder):
- Walk-in cooler 4C
- Display cooler 4C
- Countertop barista cooler 3C
- Prep cooler 4C
- Freezers were maintaining product in a frozen state. Temperature of units were -12C to -19C
- No hot holding occurring at time of inspection
- High temperature dishwasher operational. Final rinse temperature was 73C at dish surface
- Quats sanitizer available from dispenser at warewashing sink and in spray bottles for sanitizing food contact surfaces/counters. Concentration measured 200ppm.
- Pest control contract in place with service every 2 weeks. Most recent report (26-Nov-2019) provided by Manager for review at time of the inspection.
- Foodsafe level 1 requirement met at time of the inspection. The majority of the staff present hold valid Foodsafe level 1 certificates.
