Observation (CORRECTED DURING INSPECTION): Jar of alfredo sauce in the walk-in cooler was found to have a layer of pink slime on the top.
Corrective Action(s): Ensure food stock is properly rotated. Alfredo sauce was discarded at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dicer was found to have food debris on the blades and hand piece.
Corrective Action(s): Dicer must be properly disassembled after each use for cleaning and sanitizing to prevent potential cross contamination. Dicer was washed and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Main handwash station did not have single use paper towels and sink does not drain - currently drain into a bucket. Handwash station shared with the 3-compartment sink ink the over area did not have single use paper towels.
Corrective Action(s): Handwash stations must be accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Single use paper towels were placed by the back handwashing area.

Observation: 1) Bleach was too strong and bleached out the test strip.
2) Scoops were stored inside food containers.
Corrective Action(s): 1) Bleach must be maintained between 100ppm to 200ppm. Concentrations in excess of 200ppm may not be food grade To prepare 100ppm to 200ppm bleach, add 1/2 teaspoon bleach per litre of water.
2) Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods.

Observation: 2 dead rodents in monitoring stations and rodent droppings were observed in the facility.
Corrective Action(s): Operator must immediately contact pest control services to determine potential entry points for pests and seal them to prevent further infestation. Rodent droppings must be cleaned and all affected areas sanitized.

Observation: 1) Main sink does not drain properly - water drains into a bucket.
2) 3 door under counter cooler door seals are in poor condition.
Corrective Action(s): 1) Handwash station sink must be serviced and properly functioning.
2) If food is stored in the 3 door cooler, door seals must be replaced or repaired and in good condition.

Corrective Action(s): Ensure all chemicals are properly labelled to identify the contents to prevent accidental mixing and/or misuse of chemicals. Spray bottles need to be checked regularly and relabelled as needed.
