Observation (CORRECTED DURING INSPECTION): -Personal foods mixed in with public foods in Walk-in cooler including a large bowl of pooled egg

-In-use utensils stored in stagnant water: Moribashi utensils
Corrective Action(s): -Store personal foods in a designated area down and away from foods

-Store in-use utensils in ice water and replace/dishwash every 4 hours

Observation: Fruit fly activity in upstairs washroom, laundry room and dry storage rooms
Corrective Action(s): Place sticky traps in these areas -all surfaces should be cleaned and sanitized with bleach (no sticky surfaces present). Water lines should be flushed at the ends of night (sinks)

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: A) Cutting boards stored right next to mop sink

B) A number of foods stored directly on the ground and in the "walk-in" area of the Walk-in cooler
Corrective Action(s): A) Relocate the cutting boards away from mop sink

B) Obtain more multi-level shelving units for Walk-in cooler (lowest level >15cm off ground) -any foods stored in the "walk-in" area are only allowed if on mobile carts

Observation: A) 3 soap dispensers not affixed on the wall:
-empoyee washroom
-2 handsinks in kitchen area

B) The two display coolers upstairs are showing temperatures of 10-12 deg C -only whole avocadoes are stored there
Corrective Action(s): A) re-affix soap dispensers on wall otherwise get standing pump dispensers

B) Either repair units to maintain foods at or below 4 deg C or unplug units or place signs indicating "NON-PERISHABLE ONLY"

Chemical Controls:
-Bleach sanitizer buckets >100ppm as per test strips

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used
-wiping towels for waitresses are single use then hampered used with sanitizer spray bottles -okay -must be single-use towels only

Daily tracking sheets maintained for fridges, and mechanical washer -good

General Sanitation good

NOTE: operator should be placing mechanical pest control devices throughout facility: ie. sticky, snap or live traps (no poison)

Recommend having a professional pest control

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access

Place Fetal Alcohol sign in Men's Public Washroom as the City Bylaw now requires this for all public washrooms
