Comments

Routine inspection conducted:

-Handwash station adequately supplied. Ensure to obtain a liquid pump soap, instead of the squeeze bottle that has been in use until now.
-Refrigeration temperatures within requirement; Hot-holding temperatures within requirement.
-Sous vide station satisfactory. Finished products stored in sealed packaging.
-Shellfish tags checked at this time.
-General food storage practice very good.
-Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
-200ppm QUAT available in labelled spray bottles throughout.
-Glasswasher achieved >12.5ppm iodine at final rinse.
-Meat slicer maintained in sanitary condition.
-Washroom handsinks satisfactory.
-No evidence of pest activity observed at this time.
-Ventilation canopy hood maintained. Next service due in 2 weeks.
-General sanitation level of the facility satisfactory, except the areas mentioned above.

NOTE: Facility has not started with cured meat products yet. Waiting for more storage solution. OK.

Follow-up inspection will be conducted next Wednesday, March 14, 2018.
