Observation (CORRECTED DURING INSPECTION): Surface sanitizer in spray bottle had 0 ppm chlorine residual.
Corrective Action(s): Refill bottle with fresh solution (1 capful of bleach per 1 liter of water) and keep available at all time.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There is severe food debris buildup/dirt buildup in the following areas:
1) Behind the large mixing bowl area along the walls/corners, also several cobwebs present above the accumulated debris
2) The floors and walls by the storage corner
3) Along the racks of your walk in cooler and your glass door upright cooler

As explained to the operator, it is understandable that there will be some debris/flour/etc on the floor during food prep times, but the above noted areas appear to not have been cleaned in a while and thus have accumulated the cobwebs over all of the food debris. All debris should be cleaned immediately and routinely to prevent the buildup from occuring.
Corrective Action(s): A thorough and deep cleaning will need to be done in your back kitchen area. Behind the equipment, along the corners and hard to reach areas of the floors/walls, and the cooler racks as well. Pull out equipment to be able to adequately clean behind and around them.

Observation: 2 coolers are not at <4 deg C:
1) Front display cooler (Furthest from entrance door) was at 10 deg C
2) Glass 2 door cooler in back kitchen by the rear door: 11 deg C
No Potentially hazardous foods stored in these coolers at time of inspection as operator knew they were not reaching proper temperature.
Corrective Action(s): Have both coolers serviced to maintain <4 deg C. They were required as part of your intiial approval and operation of your facility. Do not store any potentially hazardous food items (dairy, eggs, etc) in either of these 2 coolers until they are serviced.

Observation: Several empty boxes and other items (in the back storage corner) are sitting in the back kitchen area. Some are collecting dust.
Corrective Action(s): Remove any items, boxes, etc that are not being used for your food service production. De-cluttering of your kitchen will help make it easier to clean all your floors, corners, etc. There are several cobwebs behind some of these items in the storage corner.
