Observation:
Cardboard covering shelves in some areas of the bakery. The cardboard has accumulated food on it and may attract pests.
Corrective Action(s):
Discontinue using cardboard to cover shelves as the shelves are painted and cleanable. Or, the cardboard is required to be changed at least once a week with new cardboard.

Observation:
The owner/operator does NOT possess the FoodSafe certificate, nor is there any daytime (prior to 4pm) staff that possesses the certificate. There must be one person working at all time, that has the certificate so they can supervise and ensure food is being processed correctly.
Corrective Action(s):
The owner/operator, and/or daytime staff require to obtain the FoodSafe Level 1 certificate. Go to www.foodsafe.ca to see when the next course is being offered.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -20C or colder; hot holding 60C; and thermometers present.
- Bleach sanitizer used in cloth buckets and in 3-comp. sink for dishwashing. [Cl2] was 100ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; and 6" off the floor on shelves.
- General sanitation is good. No signs of pests.
- Quiche are stored at room temperature for 1.5 hours and then placed in the cooler. When ordered, staff reheat in microwave for customers.
- No expired food for sale. FIFO rules being followed.
- The floor in the bakery area is worn and will need to be repaired/replaced so it is smooth, level and sealed. Save money for this future improvement.
- Disposable gloves used by staff. Ensure staff wash their hands before putting on the gloves, and that the gloves are thrown away when they are taken off. Staff shall NOT put gloves in their pocket and used later. The gloves are DISPOSABLE, once taken off they MUST be thrown away and a new pair put on after washing hands.
