Observation: - Mouse droppings noted on shelf in server area where boxes of ice cream cones were stored
- One package of ice cream cones was damaged with rodent chew marks
Note: Issue appeared to be limited to this area
Corrective Action(s): - Damaged/chewed package of ice cream cones was discarded. Check remaining boxes and discard if any signs of damage is noted. [Corrected at time of inspection]
- Clean up rodent droppings and disinfect affected area. Continue to monitor for any further rodent activity to establish if rodent activity is current or if from past issues. If any additional rodent droppings are noted, ensure area is cleaned and disinfected promptly and notify pest control technician of rodent activity in this area for additional traps to be placed.

Observation: 1) Mold noted on cardboard lining shelves and on unsealed wooden shelves in bar walk-in cooler
2) Residue, bottle caps noted on hard to reach areas of the floor under glasswasher in bar
3) Mold (minimal amount) noted on ceiling of kitchen walk in cooler near fans
4) Grime noted on exterior of dry goods bins
Corrective Action(s): 1) Discard cardboard. Wash shelves to remove mold. Either paint/seal wooden shelves so that surface is smooth, non-absorbent and cleanable or replace shelving unit with one of suitable material for food premises.
2) Thoroughly clean floor under equipment in bar to remove residue and bottle caps. Ensure this is completed routinely as part of the regular cleaning schedule.
3) Clean ceiling of walk-in cooler to remove mold
4) Clean exterior of dry goods bins.

Comments

- Handsinks in kitchen and in bar were supplied with liquid soap and paper towel
- Coolers were operating at 4C or colder
- Freezers were maintaining food products frozen
- Hot held foods (gravy, au jus, cheese sauce) were kept above 60C
- Observed good food storage practices:
- Coolers organized with raw meat and raw eggs stored beneath/away from produce and ready to eat items
- Foods were covered/wrapped
- Food products were stored off of the floor
- In use wiping cloths kept in quats sanitizer solution (200ppm). Changed every 4 hours.
- Quats sanitizer (200ppm) present in labelled spray bottles
- Bar glasswasher was operational. 12.5ppm iodine detected in rinse cycle. Iodine test strips present.
- Kitchen dishwasher operational. 50-100ppm chlorine detected on dish after cycle. Chlorine test strips present
- Foodsafe requirement met at time of the inspection
- Staff washroom maintained with liquid soap and paper towel
- Weekly pest control service remains in place. Copies of reports have been provided to EHO. Recent reports indicate a decrease in pest activity (mouse, cockroach, fly). Glueboards which were checked at time of the inspection did not have any pests present/caught. *See violation above regarding mouse droppings on shelving in server area
A fly light was installed in kitchen at the recommendation of the pest control technician. Assistant Mgr reported hole behind glass cooler also to be addressed. Next service is tomorrow. Operator to email copy of report once received.
- An improvement in sanitation is noted. Daily and weekly cleaning schedule are in place. Sanitation is satisfactory aside areas noted in the violation above which require additional attention.
Floor in kitchen including under equipment was noted to be maintained in good sanitary condition.
