Small bar cooler has been replaced and is measured at 1C.
Bar sanitation improved.
Staff washroom reorganized so chairs are not stored behind doors and mops/brooms are hung on wall.
Chest freezer in the kitchen has been replaced with standup freezer, measured at -16C.
Frozen food in new standup freezer and chest freezer has been reorganized.
All foods in walk-in cooler are covered, wall and floor cleaned.
Cupboards and kitchen flooring, toppings cooler all have improved sanitation.
Discussed reheating greek rice in microwave then transfer food content into hot holding unit directly to allow temperature of food to maintain over 60C.
Using an extra bowl inside the hot holding unit does not allow direct contact to heat.
Mice droppings under dishwasher has been removed.
Yesterday's pest control report reviewed. Some more cleaning around where dead mouse was last found to monitor for pest activity.
